Tomato Salsa on Your Pasta

Need to prepare a meal on a jiffy? How about using salsa on your pasta instead of beef bolognese, white sauce or pesto?

You'd be hard-pressed to find a pasta sauce that's easier to prepare than this. It's the perfect dish for hot summer days when you'd rather not toil over the stove, and would rather have something lighter to eat. Great for kids' lunchboxes, too!

What You Need:
Pasta of your choice (our favorite is the Buitoni Cheese and Roasted Garlic or Tricolor Shell Pasta)
1/4 c Olive Oil
2 large tomatoes, chopped
a sprig of spring onion or baby leek, chopped
a clove of garlic, minced finely
a dash of dried basil leaves
salt to taste
1/4 c Olive Oil

Instructions:
Cook pasta per instructions.
In a bowl, mix tomatoes, spring onions, garlic, olive oil, salt, and a dash of dried basil.
Drain pasta. Top with salsa and serve warm.
